Raw strawberry cream - almond tartlet
Vegan, gluten and sugar free
The award for the most joyous summer dessert goes to this 100 % guilt free raw cake. It is filled with vital nutrients your body is craving, and it tastes simply delicious. The flavour is of rich strawberry cream cheese and melting vanilla ice cream - both at the same time.
Raw cakes are not only super healthy, they are also super quick to prepare and you need only a few organic ingredients.
For the crust:
1 cup raw almonds (activated)
a handful of dates (soaked for at least couple of hours)
a pinch of vanilla bean powder
a pinch of pink Himalayan salt
a splash of nut milk/water
For the cream filling:
1/2 cup cashews (soaked for at least couple of hours)
1/2 cup strawberries (fresh or frozen)
1/2 cup coconut cream
a healthy sweetener of your choice
juice of 1/2 lemon
a pinch of vanilla bean powder
For the toppings:
fresh berries of your choice
raw cacao nibs
mint leaves
Instructions:
Blend all the crust ingredients until quite smooth yet still crunchy. Distribute evenly onto the mold.
Blend all the cream ingredients until perfectly smooth. Pour over the crust. Freeze until reaches the texture of a soft ice cream.
Top with berries and sprinkle with cacao nibs.
