Raw vegan lime & moringa cheesecake
Gluten and sugar free
I wanted to create something nice for my friend's birthday. Decided to combine two things I love - moringa and a cheese cake. The outcome was amazing - the flavour turned out very unusual and refreshingly delicious. A perfect dessert for a summer day, you will definitely be craving for the second (and a third) piece.
Ingredients (all raw and organic):
For the crust:
1 cup almonds
1/2 cup dates
1/2 cup oats
a pinch of vanilla bean powder
a pinch of Himalayan pink salt
a couple of spoons of water / coconut water
For the cream:
1 Avocado
1 cup coconut flesh or coconut cream
1/2 cup soaked cashews
Juice of 2 limes
2 TBS moringa powder
Healthy sweetener of your choice (maple syrup, dates or honey for a non-vegan option)
Instructions:
Blend all the crust ingredients until fairly smooth yet still crunchy. Distribute evenly (should make approximately 1 cm in height) into the mold.
Blend all the ingredients for the "cream cheese" filling until perfectly smooth. Pour into the mold, freeze until solid.
Top with your favourite berries, raw vegan chocolate, mint leaves and edible flowers for that extra festive touch. Enjoy!
