Choc chip cookies
Vegan, gluten and refined sugar free
I cannot imagine a more comforting snack than a crunchy-chewy cookie. These cookies are satisfying inside out as you simply don't have to feel guilty for having a bite - they are nutrient dense and taste like heaven. Combined with vegan cashew chocolate mylk - for that divine dip.
Ingredients (all organic):
2 cups oat flour
1 cup coconut flour
1/2 cup coconut oil
1/2 cup vegan dark chocolate chips
2 TBS maple syrup (or honey for non-vegan option)
a pinch of Himalayan salt
a splash of water
Combine the dry ingredients together. Add the coconut oil, water and a healthy sweetener of your choice. Mix well. Add the choc chips.
Pre-heat the oven to 180C.
Meanwhile form the cookies by dropping the dough by rounded tablespoonfulls - press slightly. Spread onto the baking sheet. Bake for 15 min or until golden.
