Healthy cold weather comfort food
Vegan, gluten free and so nourishing
As the days are getting shorter and colder, nothing feels as good as a cosy comfort food. Feelshealthy comfort food not only tastes amazing but also actually makes you feel good inside-out, and is so gentle to your body!
Here I have a healthyfied version of the autumn classic - pumpkin soup and a grill cheese sandwich. The soup is dairy free (vegan) and the sandwich is substituted with a homemade cheese focaccia bread, which is gluten, yeast, oil and refined sugar free. But oh so full of love and flavor!
Ingredients (for 2 persons)
For the soup:
1 small pumpkin, diced
3 small onions, peeled and cut into halves
herbs de provence, curry powder, smoked paprika powder, classic paprika powder, Himalayan salt.
sesame oil for sprinkling
2 TBS coconut milk or cream for serving
For the bread:
1 cup buckwheat flour
1/2 cup plant milk or water
turmeric powder, black pepper, Himalayan salt, cumin powder, baking powder
sweetener of your choice - honey or coconut blossom sugar
pumpkin seeds
vegan coconut cheese
Instructions:
Bake the seasoned veggies at 180C for 15 min or until soft.
Once ready, blend with 200 ml hot homemade veggie broth until perfectly smooth.
Mix all the bread ingredients, pour into mold, sprinkle with the pumpkin seeds and cheese. Bake at 180C for 15 min or until golden.
Serve the soup with fresh coriander, pomegranate, pumpkin and sesame seeds, a spoon of rich coconut milk or cream. Enjoy!
