Raw sesame NOTELLA bites

Gluten and refined sugar free




Oriental and nutty flavours combined into one of the most delicious cookies I ever tried. As usually, besides the exceptional taste, also packed with so much goodness. The main ingredient here is sesame which is a superstar when it comes to nutrient density - packed with vital minerals (magnesium, calcium, manganese, zinc), B group vitamins, protein and fibre. Enjoy every bite slowly - knowing that you are making your taste buds and the whole body happy inside out.

Ingredients:

For the cookie dough

1 cup raw sesame seeds
1/2 cup raw sprouted buckwheat flour
1/3 cup raw tahini paste
3 TBS raw honey (or agave or maple syrup)

For the notella filling

1/2 cup raw hazelnuts
1/2 cup raw cashews
3 TBS raw cacao powder
5 pitted (medjool)dates or 2 TBS honey 
a pinch of vanilla bean powder
a pinch of Himalayan salt
2 TBS nut milk or (alkaline) water



Instructions:

Mix the sesame paste and honey together until well combined, add the sesame seeds and flour - using hands is the most effective way to get the texture just right :) Chill the dough in the fridge for 30 min. Roll the dough until 0,5 cm thick. Cut into shapes by using cookie cutters or small glass/cup. Place the cookies onto silicon tray or use the baking sheets and put into freezer for 15 min until perfectly solid.

Meanwhile start preparing the filling by blending all the ingredients in the high speed blender. The texture has to be perfectly smooth - exactly like of Nutella. 

Once cookies are solid, you can remove them from the freezer and start making cookie sandwiches. Decorate  with fresh berries.

Has to be enjoyed immediatelly or can be kept in the freezer (in this case freeze the filled cookies without berries and add the toppings when serving).
