Raw vegan, gluten and sugar free
There are not that many things that would feel much better than sipping on a fresh coconut water while lying on a white sandy beach by a turqoise blue ocean. While at the moment this is just a day dream - there actually is ONE THING that will make you feel like you were just brought back to the tropical ocean shore. And that is nothing else but a divine coconut bar. Not only heavenly delicious, but also perfectly healthy&nutritious and quick&easy to make.
Ingredients (preferably all organic):
For the base:
200 g shredded coconut
150 g pitted dates (soaked if not soft)
50 ml 60% coconut milk
juice of 1/2 lemon
a pinch of sea or Himalayan salt
a splash of (coconut) water
For the coating:
1 TBS raw cacao powder
1,5 TBS cold pressed coconut oil
1 tsp maple syrup or raw honey
Instructions:
In a high speed blender blend all the base ingredients, except for the shredded coconut. Blend until the texture is perfectly silky and smooth - now you have some beautiful raw vegan caramel (which is fantastic also on its own). Slowly mix in the coconut - the texture has to be rather firm, like a play dough. If not firm enough, add more coconut. Distribute the mixture into the mould and place into the freezer for at least 1 hr or until solid.
Meanwhile start preparing the raw chocolate icing - by gently melting the coconut oil on a water bath. Once it is completely liquid, add the sweetener, mix well. Then - slowly start adding the cacao powder. The texture should be not too thick and not too thin - so that it can cover the bars just perfectly evenly - without being to sticky or too transparent.
Remove the bars from the mould (if necessary, you can also cut them at this stage - just allow them to warm up slightly). Dip the bars one by one into the liquid chocolate. The chocolate will solidify immediately as the bars are still very cold.
Enjoy immediately or put back into the freezer and store them for up to two weeks.
